In 2018, we introduced additional hot foods that can be merchandised cold through innovative packaging design. Take the Ramen Noodle Salad Bowl concept for example—ramen noodles sit at the bottom of the bowl container while an inner tray holds the vegetables, protein, and soup base packet. Our Hybrid Bento is also a truly unique concept in the style of a combination boxed lunch that offers a sushi item, and a heat-and-serve item.
Recognizing the industry trend towards more responsibly sourced seafood, AFC is doing its part to use more sustainable seafood. At this year’s show we proudly introduced Unakaba™, an imitation eel made of sustainable fish, available exclusively at an AFC sushi bar/food service counter. Unakaba™ has the same rich flavor and appetizing texture of true eel—crispy on the outside, succulent and tender on the inside; and we served Unakaba™ in various tantalizing sushi recipes, much to the delight of visitors to our booth. Our goal is to use only sustainable seafood by 2020.
